1. boil somen noodle( you can substitute instant ramen noodle or rice noodle for somen).
2. stir fry chopped eggplant and egg white in a pan with vegetable oil,
season with miso(with dashi),soy sauce,sake,sugar(or mirin) and “TURN OFF THE HEAT”.
3. mix 1&2 in the pan, and add lemon juice.
4. serve 3 with egg yolk and grated sesame seeds.
